Paleo Taco Salad

This is another favorite of ours (really anything with beef is a favorite of mine!). Basically, it's a big mess of everything, just mixed together, and I couldn't be more happy to devour it like a gavone when we make it! We use about 2 lbs of meat, but we have a family that eats A LOT, and we also love leftovers. The recipe below is for 1 lb, so just double if you want more.

Taco Seasoning:

1 Tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Salad ingredients:
1 teaspoon olive oil
1 lb grass fed ground beef
3 peppers (I usually do one red, one green, one yellow - they sell packs of them)
1 large onion diced finely
2 large tomatoes - diced
1 bag of lettuce (whatever kind of lettuce you want to use, we usually use romaine)
1 container of quacamole (make sure the guacamole is Paleo compliant, but most is)
1-2 cans of organic/non preservative black olives

In a large Saute pan, saute olive oil, peppers and onions. when onions are clear-ish, add ground beef and entire mix of Taco Seasoning. Brown the meat until it is completely cooked. Put meat/onion/pepper mix on top of a bed of lettuce, and garnish with tomatoes and olives. Add as much or as little guacamole, and enjoy!

As usual, if you want to add a non-dairy cheese, daiya makes a great cheddar that you could add on the meat and it will melt.
